  • 1 tablespoon ginger-garlic paste

  • 1 teaspoon red chili powder

  • 1 teaspoon turmeric powder

  • 1 teaspoon garam masala

  • 1 teaspoon coriander powder

  • Salt, to taste

  • 3 cups water

  • Fresh coriander leaves for garnish

For the Chawal (Rice):

  • 1 cup basmati rice

  • 2 cups water

  • Salt, to taste

Preparation

Step 1: Cooking the Kidney Beans

  1. Rinse and Soak: Wash the kidney beans thoroughly and soak them overnight. This helps them cook faster and digest better.

  2. Pressure Cooking: Add the soaked beans to a pressure cooker with 3 cups of water and a little salt. Cook on medium heat for about 15-20 minutes until they’re soft and tender.

  3. Check Doneness: Once the pressure releases, check if the beans are soft by pressing one between your fingers—it should easily mash.

Step 2: Making the Rajma Gravy

  1. Sauté Onions: Heat oil in a deep pan. Add cumin seeds and let them crackle.

  2. Add Onions: Toss in the chopped onions and sauté until golden brown. Add ginger-garlic paste and cook until the raw smell goes away.

  3. Tomato Masala: Pour in the tomato puree, followed by red chili powder, turmeric, coriander powder, and salt. Let it cook until the oil starts separating from the masala.

  4. Simmer with Beans: Add the cooked kidney beans along with their water. Mix well and let it simmer for 10-15 minutes. Mash a few beans to thicken the gravy.

  5. Finishing Touch: Sprinkle garam masala, give it a final stir, and simmer for another 5 minutes.
